Function of egg white

I've had a hen laying eggs that are almost all yolk with remarkably little white. It makes me wonder how they'd do if I incubated them. How much role does the egg whites play in the successful growth of a chick?

The pic below is yesterdays breakfast but she's laid eggs with less whites.

Its not a big deal. The yolk is generally the embryo and the white the feed it first lives on. Some eggs i.e. quail are relatively big yolk beside the white

I know bantam chickens have a smaller amount of white to yolk ratio also. I don't think it matters.
