After some research, I've deduced that getting Chinese geese is actually the worst Idea I've ever hear.
What, IYO, is the best goose breed to start out with?

What are you looking for in general may give people an idea on what to suggest.

Something more on the docile side. Cobra chickens are scary.
and I know geese are pretty much always loud, but something on the quieter side.

We have Toulouse, Buff American and Embden. One of each. They usually have a reason to be honking if they are. Right now their extra noisy because of breeding season. Look into those breeds and see if any suit your fancy? Their all larger breeds though.

I also have Toulouse, Americans, and Embdens. Of those breeds the Americans are the smallest, quietest, and most docile, at least amongst my lot. I feel like regardless of breed, the more time you spend with them, the more comfortable and calm they'll be.

Of course, any geese you raise from goslings are going to be friendlier. Such were my Embdens.
My other geese I got half grown.
My Americans were more docile but the gander was terribly mean. The mean one was loud but the others fairly quiet.
My Pilgrims are skittish but they also keep to themselves. They are also quiet, except when excited. Breeding season has only just started and I haven't got so much as a hiss from them.
That said, the ganders have been trying to breed the duck hens for months, which is quite dangerous for the ducks, obviously.
They only just began to show interest in the geese. I guess there is something they see that we don't that indicates a sexually mature female.

My daughter got 2 buff goslings and they are adorable, not only because I absolutely love geese, but they are much more docile than the pilgrims I have.
She also got 3 buff "stooges" ducklings, that are very funny but unfortunately very dependent on the goslings...it will be interesting in 2years during mating season, how the gander will react. He is already very dominant, just "exactly" what we need .
We are learning how much easier is raising geese in comparison with ducks...starting with muddling and poooping . There is no easy way to keep clean water and bath that geese generally love to be in, poor guys...
They,, got some very roudy and slob roomates...I hear all the "unauthorized" actions from messing the lawn and the bath and whatever they step on.
They sleep in separate areas, , otherwise, our life span would not reach maturity because of all the time,

I don't have a loose goose, but he loves dandilions when I bring them to him.

I have an embden goose. He is mean if you are changing his water, but I think he wants to force me into the water with him. With geese or turkeys I notice it you chase them they run away, if you run from them they will chase you.
