Geese and sheep/chickens?

Geese aren't really 'guard' animals per say and are actually just huge bluffers that probably won't do much to actually protect your sheep other than make noise to alarm you if something does happen. I don't really think they'd hang around sheep much even if raised with them - and would prefer to stay with other geese or even ducks. I really suggest for sheep something like llamas, alpacas or even a donkey - they will protect your herd much more than a goose could ever dream of.
As for chickens, I honestly think a big rooster would even do more to protect your chickens than a goose would probably care to do unless it was raised with them. If this is what you want, I say go for it - but make sure you have at least 2 geese because geese really do need each other and will be depressed without another of their kind around. Though be wary of geese trying to mate with your chickens if you do get geese - as it can badly harm your chickens due to differences in size and anatomy.

Geese are more of 'alarm' animals than 'protecting' animals.
