General incubating/hatching questions

I just had to put 5 eggs in bator & let mom keep 2. She's too small to handle 7...they kept falling out. I think she's a nankin.
Questions: When is the best day to candle & how often can you candle? I don't want to take them out too often & am not good at it unless I can see movement.
How much leeway do I have with the temp/humidity?
Since they'll all be hatching around the same time, what are the chances of putting the chicks from the bator with the other 2 from the mom?
This is my 1st time with a bator...so much easier with a mom!

forced air or still air bator?

forced air-99.5

still air-100.5

humidity 40-45 first 18 day last 3 i have good luck with 65-70

i candle on day 7 and 14 on day 7 there will be veins easy on white eggs

As for candling...I candled on Day 8 with my 6 brown eggs and easily saw development in them through the shell. They were just regular brown eggs though and nothing really dark. Also, I'm a total newb and it was my first time candling.
