I worked with white crested polish for a while but did not determine the genetics behind the white crest. My guess would be it would be easy to get rid of and if not then you can have white crested blue sultans.

Polish have a "brain crest", hence the white crest.

I guess I don't understand which genes cause a white crest on a non-white bird. For example, if I wanted to create white crested blue silkies, what genes would I need to introduce?

I have never seen any literature on the subject. I did not work with the birds long enough to determine if the white crest is recessive or dominant or polygenetic. I do have an old study by Davenport where he did a boat load of work with polish. I will have to dig out the study. If I find anything in the study I will get back with you. It is a small book so hang in there.
