Well im getting a bb white from a guy, and im going to process him the week before thanksgiving.

Any advice on doing a turkey vs a chicken?

Also if im going to roast him, what needs to be done to the bird as far as ageing... ect

He was born in july and he is 20+ pounds right now

Did you find a broody?

ohh sorry...my offer is still good. I think I'm going to fire the bator up soon to hatch some chocolate eggs. My kids have been begging for chocolate eggs. Let me know

If you really want to you can try to hatch them. I'm really busy now with bow season comeing up and class on weekdays, so I wouldn't be able to come out, if you want you can come out and get them and you can keep them if they hatch if you want. Pm me and I'll give u more info

I'll PM you when/If I get some dark eggs and I'll toss them in for you...I really don't need any gamebirds so you can have them back when finished. I'll let you know.

It all depends on the size of the turkey.

Chop & hang for at least 30 minutes to bleed out.

If it's a big tom you will need a BIG pot to scald it in. The feathers should come out easily if scalded properly.

Gut it just like a chicken.

Brine it for a good 24 hours prior to cooking.

If you only have 1 I'd suggest finding someone professional to process it for you.

Where in New York are you?
