Getting rid of my head roo?

I have decided to get rid of 2 roosters, to better the hen to rooster ratio. One young rooster is a little too big for my smaller hens, so he's out. As for the other, I'm thinking about eliminating my "head rooster." I got him as a chick 2 years ago, so this is kind of difficult. He also keeps everything in order here, so I'm guessing another rooster will step up, if I do get rid of him? I have another rooster, who's also 2 years old (next oldest), is it likely he will be the next head rooster? Or just whoever gets to it first? Will it cause issues eliminating the head rooster?

The more I think about getting rid of him though, the more I don't want to. It will be sad to see him go; however, he likes to "stalk" people, and he's not one of my prettiest boys.

It may cause more fighting between other roosters because they are fighting to be the top rooster.
 
I wanted to get rid of him because he stalks me every time I go outside, and tries to flog us all, if we get too close, and he seems to be getting worse. But yeah, I still like him, but sometimes he makes me so mad, I want to just put him in a pot!! (lol)
 
Well, you could always get more hens to even out the ratio
