getting rid of roosters?

I was going to ask the same question.

Should one be left? Or just remove the whole lot of them?

(I, personally, have no use for my roosters, except as an occasional exercise in breaking up a fight.)

Do the hens have a favorite?because it will really depress them if there was one they actually like,and he's suddenly gone

If you want fertile eggs you need a rooster.
If you want eggs you just need hens.
