Getting the flock out of here - a diary of a crazy chicken man

When I got my update just now on the quail, Analou said more than 20 A&M and too many (to count) Jumbo and Standard Pharaoh.

I guess that means a whole lot more than greater than 20. In about 3 hours Bernie will start leg banding the Jumbos and put them in the brooder. I will have a better count then.

With the hatch rates I had been getting, I knew that I would just have to throw enough eggs at the bator but now we have technique so improved, I could have thrown less. We are going to be in the business of quail eggs.

I would not worry too much about only 2 girls. They put rabbits to shame. I had 2. Three months later I had 40. One hatched 24 the other 16. Still it will be good to have a bit of different blood. Get Mrs P to network the Pinays in the area. You may develop a balut business.

Scovie tastes a little different to Mallard type ducks. It is more veal like. Cook it slow and a little rare. Do a practice run before you cook for guests.

I also made sausage out of it.

Here is a great recipe. http://www.foodnetwork.com/recipes/mario-batali/duck-sausage-salsiccia-danitra-recipe/index.html

You can substitute a combination of bacon and fat pork for the pancetta. Scovie tends to be pretty lean.

i was thinking about adding 15% beef fat & grinding the extra boys up.

she already made a batch of salty eggs

she plans to sell tyhem to her FB friends

maybe she can add balut to the lineup :)
