Getting the flock out of here - a diary of a crazy chicken man

If you to just hatch blues to sell put a black roo over a splash hen or the other way around and you will get 100 percent blue
the splash don't show up that often so getting a few is not a bad thing

i want better lacing so i need to breed 2 birds who both have it

i'm not really all that big on the blacks

but i do have 2 black hens

Here's a classic recipe that our Island is famed for

Chicken Inasal.

This is better outside grilled but it can also be roasted in an oven.

Serves 4

Marinade:
1/4 cup achuete oil

3 garlic cloves, finely chopped

1 stalk lemon grass, trimmed and finely chopped

3 tablespoons freshly squeezed Kalamansi or regular lime juice

2 tablespoons red wine vinegar or coconut vinegar

1 tablespoon sugar

2 teaspoons salt

1 teaspoon finely chopped fresh ginger

1/4 teaspoon freshly ground black pepper

One 3.5 pound pound chicken, quartered

1. In a large nonreactive bowl, combine all the marinade ingredients.

Add the chicken pieces, cover tightly with plastic wrap, and refrigerate for at least two hours or overnight.

2. Preheat the oven to 375 degrees Fahrenheit.

Transfer the chicken to a foil-lined baking sheet, reserving the marinade.

3. Roast the chicken, basting occasionally with the reserved marinade, until the chicken is cooked through, about 45 minutes.

No problem. Those lavender Orpington are pretty good lines too. Between them and jubilees you will do well selling eggs on eBay.

The Philippines is going well. We had guests today but installed the new main gate, pinioned the Guinea keets, shipped off two roosters and cold galvanized pig feeders. Tomorrow the pigs go into their new home.

Wyandotte adobo was excellent. Long day today. Tomorrow is toni's birthday.

A big princess party at Jollibee so we will be on the road for the morning then off to the big event.

We will spend the weekend in bacolod and one of the days we'll be in the mountains dreaming of winning the lotto and buying a 10 hectares mountain retreat

Oz I started separating birds polish & Andalusian in own pens. Big turkeys will go into bachelor pen. The olive eggers are bullies so they might go into the pot. The SLWs will go into their own pen and then the jubilees.
