very little fat & their bones are rather small unlike a chickenThe meat probably would lend itself for the corning process... Like Corned beef. stripped and smoked and dried... duck jerkey.... Rolled and tied to make carving roast... How fatty is it?
Then there is the whole possiblity of making Mules.
