My chicken was diagnosed with Giardia from a vet. She’s been treated with antibiotics and has totally recovered but my vet said we could NEVER eat her eggs. Does that seem right? This is a huge issue because if I can’t eat her eggs, that means I effectively have to separate her from the rest of the flock forever.
 
I'm not a vet, but this reputable site says it's easily treatable and says nothing about not eating the eggs, though that would depend on there being a withdrawal period from the treatment given. Could you ask your vet more questions about it and see if it's not a better prognosis for the future of your hen?

I've also found a few other threads and articles referencing it and no mention of not eating the eggs once cured. It sounds like you should switch waterers to nipple bottles or buckets with horizontal nipples. We use water purifier for RVs in our 5-gallon one.

What antibiotic did your vet prescribe?
This may be why your vet said what they did...
