Since I do the gravy, stuffing and prep the bird I was wondering. I still use them but I have to strain them out as the DW and grandkids don't care for them in the gravy even though giblets are finely diced, but the flavor is still there.

I like a few meaty chunks in gravy over potatoes or on a dinner roll. Perhaps not the liver but the gizzard and heart are fine by me. Really, for most people if they don't know what they are eating they are fine but soon as you mention "oh that's (insert slightly odd meat)" they turn their nose up to it. Unless it's a texture thing, IMO it shouldn't make a difference in your situation seeing as the giblets are in the gravy, one way or another. As Mr. Bizarre Foods always says, if it looks good, eat it!

But I'm also quite the hypocrite as I only eat wild game (and my own chickens) so unless the animal used is a proper non-farmed wild game animal I won't partake :p This is rarely an issue as most my family hunts/fishes and I am perfectly fine eating my own, sometimes odd, dish to pass. I will say some of the family will cater to my particular tastes and I appreciate it.
