Hi im going on holiday for a week in February and was just wondering if they would be allright on there own with enough food and water
 
If you have feeders and waterers set up that will last you at least a week, then you should be fine. Assuming they have a secure run attached to a coop that is always open to the run. Meaning, you don't want to lock them up in a coop for a week. That would be cruel. If you don't have such a setup, then you will want a friend or neighbor to come twice a day to let them out of the coop in the morning and put them away at night.

Also to consider are the eggs. Do you have a rooster? If so, should you have a hen that might go broody, you could come home to a hen sitting on eggs that will hatch new chicks in two weeks. Which is fine, if you're prepared for that. Otherwise, you will probably have a big pile of eggs to eat when you get home. Provided it's not over 90F where you are, the eggs will be fine. Best solution though is to have a friend stop by every 2-3 days, pick up eggs and check their food and water.
 
Our chicken are silkie hens we havent had eggs off them since last summer when we got them we havent got a rooster so would not have any problem with them going broody
