Golden Polish: Pullet or Cockerel?

Here is a cockerel with some really nice black concentration at the base of his neck. Excited to see the tail development.

These are my first chicks ever, so everything is exciting... but I understand what you're saying.

3:27 is a nice ratio. All eggs should be fertile and you shouldn't have any overbreeding. In my experience, Polish cockerels/roosters are really good at "sharing the wealth" they don't tend to pick favorites.
