It almost seems like she's molting again? Just itchy all over but I've seen her mainly go for the rear a lot

Do any of your other birds have mites?or has there been a mite issue in the past?
What feed is she on?

Not that I'm aware of. She's on Purina Duck All Lifestages

When was the last time she molted? She could be molting her body feathers, those can come off more slowly over time.

She and her age-mates molted around July-August. The 3 month olds are going through their first molt now (or getting their juvenile feathers). But that's good to know! I didn't know that!

I checked today and she's back to having really wet droppings, more solid than diarrhea though but still pretty dark green with yellow pieces in it, almost like feed?

It could be normal. You could try putting her on a round of corid. Coccidia is the most common intestinal bug and it doesn’t just to treat for it just in case.
