Goose Meat

Pricking the skin thoroughly is essential to getting a more crispy skin. I've done whole roasted goose for Christmas and get crispy skin each time.
I’ve not tried pricking the skin either, thank you for that suggestion!
 
The orchard grazed by geese sounds like it would be wonderful! Do you protect the bark on the trees or do they tend to stay busy with grass? I have not tried the compressed air method but will give that a go! Thank you
I've lost a couple freshly planted trees to the geese this year. For the most part, they haven't messed with them, but this year they decided to chew up the bark on a few nursery whips I planted in the fall. They chewed them up in the dead of winter, and they don't seem to mess with them now that spring is here, so maybe that has something to do with it.
