This is how I handle my silkie roos and so far it has worked every time. Remember, they are just protecting their hens/coop.
When I first enter the coop I find the roo and catch him immediately. I hold him, talk to him, pet him and tell him what a good boy he is. Then I put him down and go about my business in the coop. It takes a few times of doing this, but they all have gotten so much better. I rarely have one look sideways at me now.
