I usually am in charge of "breaking down" the sides into managible parts and prime cuts then they get to de-bone it. I also rinse the casings and then usually am the one managing the sausage as it comes out the stuffer to try to make sure the casings are full BUT not so full they burst open and also twist them into individual sausages.

trying but the wind keeps pushing snow over the roads and then we have slush/ice. Why because the ditches are mostly full so now the snow just goes along with the wind until it gets "stuck" or hits a low or sheltered spot and then it joins the rest of its buddy flakes.

We got a very light dusting of popcorn snow. didnt stick. Feels so good to get in the van and actually be warm . Its too warm sometimes. LOL Tom and I are back to fighting over the window being cracked open a little for my smoke. He wants it shut and as much as I smoke I cant breath with it closed. I always win of course but still have to go through the motions.

so except for taking the bone out you do it all.

if you have him crank his window down a little the wind/breeze won't come around and get him in the head and the smoke should still go out. Keep yours up window that is

no they all help and honestly trying to get the most meat off the bone as possible and then trimming it a little and cutting it into chunks that fit in to the grinder I seriously try to avoid. We all have stools to sit on around the butcher table. Gene is usually in charge of running the meat saw and the grinder. And since the country style sausage recipe is for 100 pounds at a crack we are all involved in mixing it up.

Its a half in. crack. I think he should either sit in the back, stay home or put the shut to the hell up. I would love to sit in the back. I am sick of driving and my attention span is starting to go as well. Not a safe driver .
