got another good look at Beary today, IF it is not all fuzz he is a good size boy and should get a decent amount of "rose veal" off of him. After Thanksgiving and Before Christmas is all I know. Figured we would "do the deed" the same day we move Hailey and the 3 "new" girls into the main herd.

First heifer out of Star, and she's calved 3 years in a row for me.

Same with Comet only her first one for me was Hailey. and now 2 bulls in a row.

probably let it "hang" a day or 2 and then carve it up and grind most of it at the same time.

Yep I plan on it , I would like more straw but don't actually "need' any more this year.

adult/full size yaks your hang for 7 to 10 days is all.

I don't think it would have much "flavor" to young. Maybe a few slices for Veal Marsalla or scaloppini but not sure.
