That's so sad Pert. Giving is the theme of the day, but someone has to receive for others to give. Especially for Grandpas to give. :hugs Too bad she can't bend a little and allow you to keep a good tradition alive, since it means so much to you.


She doesn't understand, does she? What a shame.


What are your proprtions... flour to whatever it is you are using. Do you add the fat gradually?

I heat about 2tbs of vegetable oil, and dump in about two cups of flour. That’s enough roux for a nice big gumbo. Mom seasons her flour, I wait til after I add water so I can make sure I’m not scorching it. If it gets scorched, you just have to start over. It starts clumpy but usually evens out as it cooks. Stir stir stir until it’s the color of cocoa powder. I start turning down the heat as it gets golden because the cast iron holds heat and keeps cooking. When it’s as dark as I can get I remove from heat, add hot water and mix it all together. When it’s a bit like thin batter I season it, then add it to my stock. Toss in chopped trinity (onions, bell peppers, celery- about 3 each and a whole sleeve of celery), a bit of minced garlic, and either shrimp or chicken and smoked sausage. Boil this for a few minutes, then simmer for a while. It usually needs a bit more salt at this point. Serve over plain right rice with a handful of saltines crushed on top.
