Yak meat is delicious and juicier than beef.
Yak meat is deep red in color because of a high haemoglobin and myoglobin content. Yak meat is 95 to 97% lean. It is the healthiest and tastiest bovine meet on the market. Yak fat is easily trimmed since it lies between the muscle and the skin; it does not marble. There is no intermuscular fat. The subcutaneous and internal fat is yellow. Yak meat has a fraction of the fat content of cattle. Yak meat is lower in fat than salmon and most other fish. Yak meat has an ideal combination of Omega-3s, low cholesterol, saturated fats, and low calories (fewer than beef, bison, elk, or even skinless chicken breast), high in poly-unsaturated fats, protein (22% which is higher than other meats) and iron. Yak meat is extremely low in palmitic acid at about 1/5th that of beef. (Palmitic acid is associated with high levels of bad cholesterol and triglycerides and heart disease.) Yak meat is higher in poly-unsaturated fats than beef and in good oleic acids. Yak meat is sweet and delicious, not gamey. Cooked slowly, it is tender. Yak hamburger is priced about $7.99-8.50/pound (2/11/12 in Idaho). Yak whole tenderloins priced up to $35/pound. Yak meat sells usually for a price equivalent to Bison. So while also being very high in protein, stearic acid and oleic acids, Yak meat is very low in cholesterol, saturated fats, and calories, yielding very healthy HDL to LDL ratios in humans. These "Faks" alone should get you very excited.
