I got this today from the Guy who bought Wagoner and Nostril. I think some of what he say's is just trying to set me up for accepting less the next time around and some is BULL and some he has a point on.
Hi Scott, 2/3/20
Please find enclosed my check # 3540 for $2375.00 for your 2 yak bulls weighing 1900 pounds total live weight at $1.25/pound.
As I go on to analyze the meat and process for profitability, and outcomes, I will try to keep you apprised along the way.
I generally expect hanging weights to be right at 50% of live weight for this size animal; which would yield 950 hanging weight.
Actual hanging weight was 875 pounds, 480 for one and 395 for the other; so less than expected by a fair amount, especially on the smaller one of the 2. Any thoughts as to why that would be?
I just checked with Justin at J & J Hazen Meats for the carcass weights and for box weights of product to be picked up by a trucking company. He is behind schedule, because he was informed by the USDA inspectors that he had to get labels approved for this product. That means he had not been previously approved to process under the Triangle Stamp inspection. So we somehow had gotten bad info from him that he already had these approvals. So we have an extended wait to get these labels approved, and get the product shipped to me.
We will see how the rest of the processing goes and how it looks, before I make a final assessment on the experience.
Will keep you posted.
Thanks,
