mom used to make limejello with cottage cheese and sometime pineapple in it , I can't seem to get it right. Something about the cottage cheese I buy/get.

canned or fresh pineapple ??

I use canned but you could use fresh if wanted. Its pretty versatile.

yes and you always have to wait until its half set or a little more before adding anything to the jello unless you want segregation in your jello.

NEVER use fresh pineapple or kiwi I believe says on the jello package as it will NEVE set.
