They do have heads. You're supposed to drop them in boiling water head first, I've always heard, more humane.

I thought you were supposed to stick a knife between the eyes or something, to kill quickly.
I've never had lobster that I can remember. Dungeness crab is the way to go, and it doesn't have to travel by air to get to my table. And it's deeelicious!
