Granny's gone and done it again

My Mennonite lady ices the birds after processing. I pick them up the same day. Then I like to leave them in the fridge for at least 3 days before cooking or freezing, so that should be about right. This gets the rigor out of the meat and lets the fibers relax, making for a more tender bird.
