Granny's gone and done it again

We eat a large one in two meals. Half one day and then half the next. Once cut they need to be eaten soon.

I don't think so. Millions of hens slaughtered that no longer are producing eggs. Same happening with broilers in some places. Haven't heard of any Avian flu down here yet. Going to stash my pets in a safe place.
Do you sprinkle lemon juice on them? I also heard to leave the seed in the side you are saving. No idea though if its true.
Egg place here about 10 miles or so got shut down a couple months ago. Big supplier too. I assume they had to cull the chickens.

when/if the price of eggs come down they will be getting rid of them. The same thing happened a few years back. I think it was because of covid
Big egg production farms have hens inspected with blood work frequently. If one hen test bad they slaughter the whole flock. I remember a virus that invaded FL hens 20-30 years ago that eliminated many farms.

No lemon juice for us. Just a light sprinkle of salt and a little white pepper with a smear of olive oil mayo. Seed gets removed and the saved half gets tightly sealed with a wrap as in glad wrap.
