Don't buy polyester or microfiber sheets. Cotton lasts way longer.

We use cotton already. I got lucky and found some deep pocket sheets for $60. I've been paying around $90. and they just don't last no time.

They are blue in the incubator. The lighting in the room makes them look white-ish.

figured it might be my eyes

If you compare the eggs to the white on the surrounding parts of the computer screen you can tell they are not a white like a leghorn egg.
