Wishing you are the most studious person I know besides WillSome of the red pigment leaches out into the vinegar, so the onions look a little faded. Red plant pigments are really cool. You can take some shredded red cabbage, put it in a pot with hot water, and let it soak overnight to pull out the pigment. Then you can use the purple colored water to test stuff for pH values, or at least see if they are acids or bases. It's like magic! If you pour some in a base, like ammonia, it instantly turns blue or green or yellow depending on your starting color. In an acid it goes magenta-pink-red. really cool. So says the science nerd.
