Jane, I love hard boiled eggs. I have such a hard time peeling them. I like to keep them in the fridge for a quick snack..

Let the eggs age for a few weeks then boil them. They peel much easier.

I think it's 4 weeks unwashed on the counter, and 2-3 months in the fridge. Grade B eggs are PACKAGED at 30 days old, not counting travel and shelf time.
