hard to make head cheese with out heads. and cheeks are needed for blood sausage also they are supposed to be really good by themselves.

Twist, did you make that sausage from intestines ?

nope you use the intestines for the casing of the sausage. I buy the pre-cleaned and packed in salt ones.

Thats what I meant, didnt ask right. Is all casing made from intestines ?
