to drain out most of the blood and let the meat age/tenderize (start breaking down) BUT since Yak doesn't have much marbling you don't age it as long.

ever make grilled ham or bologna cheese ? They taste good but you cant get them to stay still. One bite and the meat is sliding out the side

Nah, just having a snack. Supper was salisbury steaks and mashed potato. Wish he would do more veggies.
