Well while Gene's family was mixing their sausage, Gene and I got mine into casings and into containers to transport to his place from smoking.

Then I rinsed and cleaned more casings for them with THEY stuffed their own sausage. ACTAULLY had lots of help with clean up tonight , just need to get some things/parts back out of the dishwasher and put in boxes and then Silver can go back into the garage.

I like the stuffing part.

I just bagged the hocks and threw them in the freezer Until I can get parts for the meat saw. I am NOT going to try and cut them with the sallsaw like I did the chops and steaks and roasts yesterday.

I hope the antibiotics are working but we wont know for a few weeks. I dont know how I am going to keep up what I am doing for 6 weeks min. I cant. I have to get help somewhere.
