You don't "process" the bulls until they are between 3 and 4, IF you "neuter' them expect a DRASTIC size/weight reduction in the steer.
A friend of mine sent a 4 year old steer and his 3 year old FULL brother to be processed and the Steer weighed between 3 and 400 pounds less. ONLY thing different was the removal of the "marbles"
