Whats harder to make, caramel or fudge ?

carmel is more stirring BUT fudge is harder to pour as I have to use different kettle. Also the fudge is thicker so more effort to stir at the end.

water is 8 pounds per gallon. I have no idea what the tank itself or the stand weigh.

it scorches VERY easily.
