Granny's gone and done it again

Spatch-cock. Cut it in half from top to bottom, remove breast bone, lay it flat on its back. Cooks twice as fast. Can do with raw bird as well. Quail often served this way in restaurant, cooks really fast.
I do it with quail by cutting out the spine. Easier to clean the bird that way, as well as cook it.
 
Sun is shinning again today. Has been all week so nice to see it. I filled up all the tanks . they were low. I didnt change water. I am having a hard time with that breathing thing today. LOL
Yeah, but it is still cold today, and windy. Should be better tomorrow.
