Granny's gone and done it again

I don't drink coffee any more, I was highly addicted to it for a while.
Medium rare, maybe once or twice a year. Just had some last night as a matter of fact. Sadly, I slightly overcooked it. But sliced some thin tonight, seared it with red onion and made it into tacos. Meant to have a fajita but was out of flour tortillas.

Used to have Arabian horses (in NM) but now I live in MO, which is tick territory.
TACOS!!! Those are amazing! Especially when they are authentic!
 
Yeah...my family members like it medium rare. I prefer it nice and firm on the outside. 😋
Put it in a really hot skillet, put a Tbsp or so of* butter on the pan, get a good sear on it on both sides, but leave the middle pink. How long this takes depends on the thickness of the steak. (Salt and pepper it first and start it at room temp.) When done cooking, don't cut it right away! Let it rest for up to 10 minutes to let the fibers relax, or the juices will run out, giving you a tough, dry steak.

I never knew you lived in Indiana! In fact, I dont know anyone else that lives there!
It is very beautiful here. I live in the boonies. We didnt have internet for the first. 8 yrs I lived here. They finally run it out to us.

Somehow I dont like the taste of pink meat...it tastes weird...
