My mom is lactose intolerant, but she still drinks milk, just not whole milk. And she still eats bread. Doesn't follow the rules very well

But I couldn't give up milk or bread either!

slice and batter then fry eggplant then use the slices like you were making lasagna replacing the noodles with the eggplant. you would like it I bet. Eggplant casserole or Musaka.
