And they still tasted bitter to you? Wow. My MIL only boiled em once. And as far as I know, that's it. It wasn't until after I got so sick that I googled and found out you're supposed to boil em twice and then fry them. I thought I was gonna die. But she grew up on them, probably immune.
- Remove pokeweed leaves from plant.
- Rinse pokeweed leaves in cool water.
- Bring leaves to rolling boil in large pot for 20 minutes.
- Pour leaves into sieve and rinse in cool water.
- Repeat steps 3 and 4 two more times.
- Panfry pokeweed leaves for a couple of minutes in bacon grease.
- Add crushed bacon, salt, and pepper to taste.
- Serve and enjoy.
