Granny's gone and done it again

TheMan picked up a rib roast for our Christmas dinner. I have an electric roasting pan to cook it in. Gonna look for or order a remote thermometer so I can cook it without opening the lid. He also got two pre-baked pies. Pumpkin and pecan. Sigh. I REALLY miss my oven!
