Wild yeast, I guess. Not the commercial kind. But very slow fermenting. Takes two days to make a loaf or two. It rises very slowly overnight in the fridge. And most of the gluten, about 90%, gets digested in the process! I find it highly digestible. Easy on the stomach.I do. I can't eat a lot of it..gets me. Yeast in there?
I grew up in Denver. And raised my family in NW New Mexico in sight of the La Plata mountains in SE Colorado. So ... the Rockies. REAL mountains. Not like the Ozarks, these rolling hills called mountains.From...?
Oh..wonder why..my stomach is pretty messed up though. Sometimes I can eat something that usually bugs me, sometimes not. I hope I can eat hers.
