Guess I would have to special order it.

Just take a deer to the processor and have them do it your way. I don't think it is for sale other than to the owner of the deer. Deer meat is usually not allowed to be sold like domestic cattle, lamb, pork, poultry as it is a wild game that can't be harvested for market. Maybe in other countries but not in any state I've lived in. When I had mine made I took the deer in after I took it to the check in station that the state of MO had set up for that years hunt.
