I make pinto beans every month for potluck, once a month on second Sabbath of the month we have potluck or Fellowship Dinner. I'd like to bring something different but my church has let me know that they want my BEANS! I don't do anything fancy, just season them with salt and cook them in my slow cooker but if I didn't bring them there would be a riot. We also bring everything needed for taco salad except meat, we call it haystacks, very popular, build your own. Lettuce, tomato, onion, sliced black olives, sour cream, shredded cheese, salsa, and Fritos corn chips (goes on bottom, it's the "hay"). Avocado if available.
Wow. Haystacks are different here. But, they're called, Hawaiian Haystacks. That should tell you why they're different. :)

Had to look it up. May-July. :) Don't see them in gardens much here. In the dryer parts of the state. Where there's a lot of sage brush. Back in my younger days, I did a lot of hiking. Love our mountains. We have green in our Canyons and plenty of dry ones too. I'm sure you've seen the photos if our southern part of the state. What a diversity we have here. It takes a while for flowers to bloom in higher altitudes. It so pretty though! I used to love driving through Strawberry Reservoir. Fall is also beautiful! A loy of yellow Aspen trees mixed in with the green evergreen and pine trees.

No you are way down in the rocky waste lands of MO it sounds to me like. You got to north of US Highway 36 (Pony Express Route) and there is corn, beans, and wheat land. At one time the record yields for corn was held in eastern MO. There is farm land with rich soils also around Richmond, MO. Any where along the major rivers of MO where once they overflowed and left deposits of what washed off those hills has deep rich crop soil.
