Granny's gone and done it again

I love cold hard boiled eggs! :drool
With salt and a tad of white pepper.
I was referring to cold cooked eggs as in fried. Guess I mentally categorize hard boiled as being a different variety of cooked. I love omelets and eggs over easy but just not hard boiled...with one exception.

My favorite variety of hard boiled eggs is how my mother used to make them. Shelled hard boiled eggs marinated in a liquid of red beets, vinegar and sugar. I wasn't a red beet fan as a kid but love them now but I used to really pack away those red beet marinaded hard boiled eggs.

I'm not even a big fan of regular hard boiled eggs mainly because they give me gas and there is nothing more unpleasant than burping rebounding eggs...that's a real.... :sick The burping, not the eggs.
 
Those are pickled eggs, MC. I've never been brave enough to try them!
Oh, you should definitely try them. I think it's either a German dish or a Pennsylvania Dutch recipe. I think she just dumped a couple of cans of beets in a pan, add vinegar and sugar to taste, heat it till the sugar is dissolved and then add the shelled hard boiled eggs to the liquid. The longer you let them set the better they are. She would just refrigerate them and occasionally stir them while they cooled. If you let them set long enough the whites would get a bit rubbery and the beet juice would actually make it to the yolk. THAT's when they were delicious, lol.
