Granny's gone and done it again

Miss Iris, I want to make this jelly too! Only I will try it using Truvia, one-for-one straight across for sugar. I will let you know how it goes.

Do you have a recipe for peach jam? The peaches are so good this year ...
I do have a peach jam recipe that's as easy as the grape.
7 cups of sugar (or Splends or Truvia), 4 cups peeled and finely chopped peaches (I use the food processor) that's about 3 pounds or 10 medium size peaches.); 1/4 cup lemon juice; 1 box Sure Jel (pink box if using Splenda). In a 6 to 8 quart heavy pot combine sugar, peaches and lemon juice. Bring to boil over medium heat stirring to dissolve sugar. Quickly stir in Sure Jel. Bring back to full roilling boil stirring constantly. Boil hard for 1 minute, stirring constantly. Remove from heat and skim off foam I add 1 teaspoon of butter with the Sure Jel to help reduce the foam. Ladle hot jam into hot half pint jars leaving 1/4 inch head space. Wipe rims, apply lids and rings. Process 5 minutes in Water Bath. Makes about 7 half pints.
If you like spicy use 6 cups of sugar add 4 large jalapeno peppers seeded. I puree the peaches and peppers to make 5 cups of juice for this. finish the same way. It only makes about 4 half pints. It is really good on pork.

I don’t think she eats pork but it sounds good. Delicious even. LOL
 
The jam made from peaches that we gave to our neighbors has just a hit of cinnamon to it. It's delicious. Would never have thought of using cinnamon in jam before. I imagine if you were making apple jelly a touch of cinnamon would really be yummy.

Afternoon all. Another beautiful day here. Sunshine, low humidity and 78 degrees. Fed and watered the chickens early, came in and immediately stubbed the middle toe on my left foot on one of my barbells. Toe popped and stung like the devil. Now it's a glorious shade of black and blue. Don't think I broke it. I can walk on it. Haven't tried shoes on yet but geesh, talk about physical therapy being hazardous to your health.

Did you need to have pain on both ends of your body so you balance? At least the toe is a nice color and when it starts to heal it will be a pretty shade of green! I never thought about putting cinnamon in peach jam, but I bet it would be good.
