As for the pizzas. Last time I made bread I divided the dough into four pieces and made pizza out of two of them, as an experiment. I put the other two into baggies and froze them. The pizzas turned out pretty good. So yesterday I took out the two frozen lumps and put them in the fridge to thaw. This morning I put them on the counter to warm and rise. Tonight I shaped them and par-baked them, no easy feat! Trying to wrestle these things onto two large pre-heated pizza pans in the oven without getting burned, yeah, what was I thinking, ha! But I managed. Baked them about 7 minutes, just to set them up.
Then let them cool, put all the toppings on, baked again. Turned out tasty but I hope you don't expect your pizza to be round, lol! It got eaten anyway.
