Have you ever tried just giving your carrots a good rinse and using your hands to rub the dirt off? I stopped peeling mine because they taste so much better w/ skin on.Just to show I'm not totally helpless ... Melissa had to help me a bit (she brought the Instant Pot in from the back porch where it lives and I can't get to), but right now I am babysitting a batch of potatoes and carrots cooking. I scrubbed the potatoes, peeled the carrots, and cut them all up. I'll also be making a dozen hard-cooked eggs for DH's breakfasts.
