LoKo, I can't get your picture to open bigger so I can't see what you took a picture of.

. We have had horrible winds the last 2 days & very cold temps. Very fortunate that we got missed with the snow, some places got 8 inches. Can't tell you how happy I was when I got up this morning & we hadn't gotten the snow.

Would like to ask all of you a favor tonight. My future SIL has surgery in the morning. He needs to have a couple of his Parathyroid glands removed because of tumors. These are located on the backside of his thyroid gland. Its very sad, his doctor knew about this condition since he was 18, but because he didn't have health insurance he was never informed how bad it was to not treat it. This condition has been robbing all of his bones & teeth of calcium. It has caused many health problems & a lot of pain for him. They say that after the tumors are removed the calcium levels in his blood will revert back to his bones & that the extremely toxic blood calcium levels will drop to normal. The high levels of calcium in his blood has caused many adrenal problems & heart problems. Asking that you all lift him up in prayer. Praying that tomorrow is the start of a new life, less pain & a renewed energy. Thank you :hugs

Copied and pasted from text. He's worked in the kitchen with me so I was just jogging his memory. Let me know if somethings not clear:

Spaghetti: boil noodles in water with a lot of salt and a little oil. Drain. Top with warm sauce and cheese. OR layer noodles, sauce, and mozzarella cheese in casserole dish. Garnish with dried parsley. Bake at 425 until cheese is brown.

Alfredo bake: same thing. Boil fettuccini noodles. Top with warm Alfredo sauce, diced chicken breast, steamed broccoli, etc. Or layer like a casserole and bake.

Shepherds pie: cook ground meat. Season to taste. Layer in casserole dish. Top with mashed potatoes (made with garlic, parsley, butter, milk, skins on). Top with cheese, garnish with dried parsley, and bake at 425 until brown.

Portions: if cooking for six, then follow the suggested serving sizes on your labels. It generally works out correctly. If you don't know, then guess. Ie- think about how much baked potato a person could eat. That's how many you'd need for mashed potatoes. I always google serving portions of meat.

Bean soup: get bags of dry beans (the more varieties the merrier). Mix and sort into jars. (Classico pasta sauce is delicious AND comes in a mason jar. I save them for food storage). Rinse beans (a pound or two) and soak over night. Rinse again, cover with roughly double the amount of water, and simmer on low a few hours. Season with salt, pepper, garlic, onion, etc. Add a few links of good smoked sausage and cook on medium high about an hour. Stir frequently so it doesn't scorch. Serve with sweet cornbread muffins.

Mom soup: cook sausage and beef (we use whatever is on sale and cut into chunks). Season with salt, pepper, garlic, onion, parsley, etc. Add two BIG cans of tomato juice (worth it to spring for name brands here). Add bags of frozen mixed veggies, cans of beans, whatever. Cook on medium until hot. Taste and reseason. Cook at least another 20 minutes. Serve over seasoned rice with saltines.

Seasoned rice: follow rice directions. Add salt, pepper, chicken bouillon, garlic, parsley, and butter. (For Asian dishes add a bit of ground ginger). Cook per instructions.
