I've only used those pre-peeled "baby" carrots for moisture, and my mealies seem to be thriving. I read that it's better to use carrots than fruit, as the latter is more prone to molding.
I too have read about spritzing a paper towel or newspaper for moisture, but I'd be careful not to introduce too much moisture as to cause mold. I had one of my many 6 qt plastic shoe box containers develop mold this spring. Had to throw it out. And that was just with a carrot inside. Of course I had only drilled small holes for ventilation. Since I've cut holes in the lids, covered by hot-glued screen pieces, I haven't had that problem.
My first 6 qt box has matured. This week I sifted them out and counted them. There were about 4000 in one little shoe box! (No, I didn't count all 4000! I got tired at 300, then weighed them and used a little math to get a good estimation.) I fed some to my chickens this week, and, as you may imagine, they just loved them! Jumping over each other to get at them. Having little beak sword fights over them.
