So we have Guinea keets who are about 2 weeks old, and we would like to start training them with White millet, but think they are a little too young to just have dirt from outside. Would baked eggshells work as grit for the Guinea keets? Or should we just wait until they are a little older?

Egg shells will not serve as grit and should not be fed to keets. It can cause kidney problems if the young males get too high a calcium level.

You can buy chick grit or the type of grit sold in pet stores for small caged birds. Here I just go out and get some grit from the big ant hills.
